Kuppersbusch working in conjunction with Gratte Brothers Catering Equipment
At the Dorchester Hotels new country flagship hotel Coworth Park, Kuppersbusch working in conjunction with leading distributor Gratte Brothers Catering Equipment supplied and installed the bulk cooking equipment in this state of the art kitchen, catering for the hotels guests in the fine dining restaurant and busy banqueting trade.
Kuppersbusch Premium Line FES100 Boiling Kettles and an FEP610 Bratt Pan offer the chefs complete programmability with regards to preparing the detailed stocks and sauces with absolute precision. “Each kettle holds 110 litres, which we reduce down to three to six litres, depending on collagen content,” Campbell adds.
An ability to pre-programme the start times of the cooking functions also frees up the chefs to concentrate on their art in delivering the fine-dining menu to the hotel’s diners.
The hotel boasts, in addition to the restaurant and banqueting facilities, the latter of which his housed in the impressive barn, an exclusive spa experience and, in it’s fabulous grounds, also hosts numerous polo matches throughout the season.
Gratte Brothers have long been an advocate of the Kuppersbusch products and this project follows on in the tradition of working together on installation such as Unilever, Whitmore School, Knight Frank and Catlin Insurance.
The impressive and sure to be award-winning kitchen, features a number of unusual features including "rise & fall" service gantries above the pass, allowing products to be held at optimum temperature during service, but also elevating above head height when not in use to allow the chefs a clear view throughout the kitchen.
