Installed bulk cooking equipment at this prestigious location
Working in conjunction with consultants, Margaret Young Associates and the kitchen contractor Western Blueprint, Kuppersbusch delivered two FEP230 Pressure Bratt Pans and two VEI 150 Vario Mixer Kettles.
The benefits of pressure cooking are becoming more understood - quicker cooking times, improved nutritional content, energy savings and increased utilisation of space all contribute to the decision many are making to go with pressurised equipment. What would ordinarily take three-four hours can now be done in under an hour and the models supplied by Kuppersbusch, with 110 litre capacity handle most of the school’s bulk production, the remainder being produced in the Vario Mixer Kettles.
The kettles, being able to cook, mix and chill, all within one programme, offer incredible flexibility. In addition to comply with HACCP, they record every programme performed and store the data for a year. Cooking times, temperatures, mixer speeds, recipes and quantities, cooling processes and times are all recorded and can be presented in graph format to ensure that every process is easily interpreted. 150 litre capacity each enables the school to produce and cool large quantities whilst considerably reducing manual handling and ensuring that the food is produced in a safe environment.
The kitchen caters for 1300 pupils and 200 staff and was completely refurbished during the contract which also induced a new servery system.
